Blueberry Buttermilk Pancakes
Ingredients
- 2 cups (480 ml) flour
- 1/4 cup (60 ml) sugar
- 2 1/4 tsp (10 ml) baking powder
- 1/2 tsp (2.5 ml) baking soda
- 1/2 tsp (2.5 ml) salt
- 2 x eggs
- 2 cups (480 ml) buttermilk
- 1/4 cup (60 ml) melted unsalted butter, plus some for frying
- 1 cup (240 ml) blueberries, fresh or frozen
Method
- In a large bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
- Beat the eggs with the buttermilk and melted butter.
- Combine the dry and the wet ingredients into a lumpy batter, being careful not to overmix.
- Heat some butter in a skillet.
- Spoon 1/3 cup (80 ml) of batter into the skillet and sprinkle the top with some of the blueberries.
- Cook for 2 to 3 minutes on each side.
- Serve with your favorite topping and maple syrup.
