Blueberry Buttermilk Pancakes

Ingredients

  • 2 cups (480 ml) flour
  • 1/4 cup (60 ml) sugar
  • 2 1/4 tsp (10 ml) baking powder
  • 1/2 tsp (2.5 ml) baking soda
  • 1/2 tsp (2.5 ml) salt
  • 2 x eggs
  • 2 cups (480 ml) buttermilk
  • 1/4 cup (60 ml) melted unsalted butter, plus some for frying
  • 1 cup (240 ml) blueberries, fresh or frozen

Method

  1. In a large bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
  2. Beat the eggs with the buttermilk and melted butter.
  3. Combine the dry and the wet ingredients into a lumpy batter, being careful not to overmix.
  4. Heat some butter in a skillet.
  5. Spoon 1/3 cup (80 ml) of batter into the skillet and sprinkle the top with some of the blueberries.
  6. Cook for 2 to 3 minutes on each side.
  7. Serve with your favorite topping and maple syrup.
