Monica's Cheesecake.

Ingredients

  • 34 graham wafers(make into crumbs-about 4 cups (960 ml))
  • 1/4 lb. (115 g) butter, melted
  • 2 large pkgs. cream cheese
  • 3 eggs
  • 1 c. (240 ml) sugar
  • 1 can of E.D.Smith pie filling( I usually use raspberry)
  • 1 small sour cream
  • 3/4 c. (180 ml) sugar
  • 1/2 tsp. (2.5 ml) vanilla

Method

  1. Mix the butter together with the crumbs and press 2/3 of the mixture into the bottom of a 9 or 10 inch (25 cm) springform pan.
  2. Mix together until smooth and pour over the graham crust. Bake for approximately 20 mins. (I find it takes more like 30), until semi-firm.
  3. Spread the fruit filling over the mixture.
  4. Mix separately and spread over the fruit filling.
  5. Sprinkle the rest of the graham crumbs on top.
  6. Bake another 10 mins.

Chill well (I usually make this the day before and freeze) Enjoy!!!!
