Ingredients

  • 3 eggs
  • 1 cup (240 ml) sugar
  • 1 cup (240 ml) oil
  • 1 teaspoon (5 ml) vanilla
  • 3 cups (720 ml) all purpose flour
  • 2 teaspoons (10 ml) baking powder
  • 1/2 cup (120 ml) chopped toasted almonds
  • 1/2 cup (120 ml) chocolate chips
  • 3/4 cup (180 ml) toasted coconut, cooled.
  • 1/4 cup (60 ml) chopped maraschino cherries

Method

  1. Beat the eggs and sugar, then add the oil and vanilla. Add the flour and baking powder till a soft dough forms, then add the rest of the ingredients.
  2. Divide and shape into 2 long logs on a parchment-lined cookie sheet. Bake at 350 degrees (175°C) for 20 minutes.
  3. Take out of the oven and let rest for 10 minutes, then slice and put back in the oven for 15 minutes.
