Broiled Coconut-Pecan Icing
A icing forked into its own recipe per the archive's rule that accompanying components (glazes, marinades, rubs, sauces, etc.) are kept as standalone recipes. It also remains inline in Oatmeal Cake with Broiled Icing, where it is originally used.
Ingredients
- 1/4 cup (60 ml) packed light brown sugar
- 3 tablespoons (45 ml) unsalted butter, melted and cooled
- 3 tablespoons (45 ml) milk
- 3/4 cup (180 ml) sweetened, shredded coconut
- 3/4 cup (180 ml) chopped pecans
Method
- In a medium bowl, whisk the brown sugar, melted butter, and milk together, then stir in the coconut and pecans.
- Spread the mixture evenly over the warm cake. Broil until the topping is bubbling and golden, 2 to 5 minutes.
