Cherry Cheesecake Filling
A cherry cheesecake filling forked into its own recipe per the archive's rule that accompanying components (glazes, marinades, rubs, sauces, etc.) are kept as standalone recipes. It also remains inline in Brownie Bottom Cherry Cheesecake Squares, where it is originally used.
Ingredients
- 2 8-ounce (225 g) packages cream cheese, softened
- 1 cup (240 ml) cherry preserves
- 1⁄2 teaspoon (2.5 ml) almond extract
- 2 large eggs, lightly beaten
Method
- In a large bowl, beat the cream cheese with an electric mixer on medium speed just until smooth. Add the cherry preserves and almond extract and beat on medium speed just until combined.
- Using a spatula or wooden spoon, stir in the two lightly beaten eggs (do not overmix).
