Chocolate Glaze (Chocolate Cream Squares)

A glaze forked into its own recipe per the archive's rule that accompanying components (glazes, marinades, rubs, sauces, etc.) are kept as standalone recipes. It also remains inline in Chocolate Cream Squares, where it is originally used.

Ingredients

  • 1 tablespoon (15 ml) butter
  • 1/4 cup (60 ml) granulated sugar
  • 1/3 cup (80 ml) water
  • 4 ounces (115 g) bittersweet chocolate, cut into 1/2-inch (1 cm) pieces
  • 1 ounce (30 g) unsweetened chocolate, finely chopped
  • 1 teaspoon (5 ml) pure vanilla extract

Method

  1. In a small saucepan, combine the shortening with the granulated sugar and water and bring to a simmer. Off the heat, add the bittersweet and unsweetened chocolate and let stand until melted, 2 minutes.
  2. Whisk in the vanilla. Let the glaze cool until slightly thickened, about 30 minutes.
