Ginger Lemonade

Cold and refreshing this is just the thing for summertime, and making it couldn't be simpler. A spicy ginger lemonade.

Ingredients

  • 1/3 pound (150 g) fresh unpeeled ginger root, cut into 1/2-inch (1 cm) chunks
  • 1 1/2 cups (360 ml) water
  • 4 large lemons, juiced
  • 1 cup (240 ml) white sugar
  • 7 cups (1.68 L) water
  • 16 leaves fresh mint, crushed

Directions

  1. Place the ginger in a blender, cover with 1 1/2 cups (360 ml) water, and blend until thick and pasty.
  2. Strain the mixture into a 2-quart (1.89 L) pitcher, squeezing the ginger pulp as dry as possible.
  3. Stir the lemon juice and sugar into the ginger juice until the sugar has dissolved.
  4. Pour in 7 cups (1.68 L) water, stir to combine, and serve garnished with crushed mint leaves.
  5. A splash of vodka would only make it better.
