Passover Brownies

Ingredients

  • 1 cup (240 ml) unsweetened cocoa powder
  • 1 cup (240 ml) sugar
  • 4 large eggs
  • 1/2 cup (120 ml) vegetable oil
  • 1 tsp (5 ml) vanilla extract
  • 1/4 tsp (1 ml) salt
  • 1 cup (240 ml) chocolate chips

Method

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch (20x20 cm) baking pan with oil, or line it with parchment paper, to make removal easy.
  2. In a medium bowl, whisk together the cocoa powder, sugar, and salt. Add the eggs, oil, and vanilla extract, mixing until smooth.
  3. If you love chocolate, fold in the chocolate chips at this stage for extra richness.
  4. Pour the mixture into the prepared pan. Bake for 25 minutes, or until the top looks set and a toothpick inserted comes out with a few moist crumbs.
  5. Let the brownies cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely before slicing.

The key to great brownies is balancing the moistness and chewiness. Overbaking can lead to dryness, so keep an eye on them. If you prefer fudgy brownies, aim for slightly underbaked center, as they will continue to cook while cooling.
