Passover Nut Cookies

Ingredients

  • 3/4 cup (180 ml) coarsely ground almonds
  • 3 cups (720 ml) coarsely ground walnuts & pecans (combined)
  • 2 large eggs, beaten
  • 1/4 cup (60 ml) sugar
  • 2 tbsp (30 ml) honey plus the zest from one small orange
  • 3/4 tsp (4 ml) cinnamon

Method

  1. Preheat the oven to 350 degrees (175°C) fahrenheit. Cover a baking sheet with a "Silpat" or parchment paper.
  2. Mix together the nuts, eggs, sugar, honey, and cinnamon until moist and workable. If needed, add a little more honey for moisture.
  3. The mixture will be sticky, so wet your hands before shaping it into balls about 1". Place them on the baking sheet and flatten with a fork.
  4. Bake for 10 to 15 minutes, or until very lightly browned for chewy cookies.
  5. Let them cool on the sheet, then remove with a spatula. Makes about 36 pieces. Sprinkle with powdered sugar if desired. Can be frozen in an airtight container
