Lemon-Feta Finishing Sauce (Greek Wings)
A sauce forked into its own recipe per the archive's rule that accompanying components (glazes, marinades, rubs, sauces, etc.) are kept as standalone recipes. It also remains inline in Greek Wings, where it is originally used.
Ingredients
- ½ cup (120 ml) extra-virgin olive oil
- 3Tbsp. (45 ml) fresh lemon juice
- 1small garlic clove, finely grated
- ½tsp. (2.5 ml) cayenne pepper
- ½tsp. (2.5 ml) cracked black pepperKosher salt
- ¼cup (60 ml) chopped parsley
- 3oz. (85 g) feta, crumbled
Method
- Whisk the oil, lemon juice, garlic, cayenne, and black pepper in a small bowl, then season the dressing with salt.
- To serve, stir the parsley into the dressing.
- Arrange the wings on a platter, drizzle the dressing over, and scatter the feta on top.
- Garnish with lemon if desired.
