Smoky Spice Rub (for Chicken)
A rub forked into its own recipe per the archive's rule that accompanying components (glazes, marinades, rubs, sauces, etc.) are kept as standalone recipes. It also remains inline in Honey Barbecued Chicken, Grilled Honey Chicken, where it is originally used.
Ingredients
- 2 Tbs. (30 ml) olive oil
- 2-1/2 tsp (10-2.5 ml). kosher salt
- 1 tsp. (5 ml) chili powder
- 1 tsp. (5 ml) sweet paprika, preferably Hungarian
- 1 tsp. (5 ml) light brown sugar
- 1 tsp. (5 ml) chopped fresh thyme
- 3/4 tsp. (4 ml) freshly ground black pepper
- 1/4 tsp. (1 ml) chipotle chile powder
- 1 clove garlic, minced
Method
- In a small bowl, mix the olive oil, salt, chili powder, paprika, brown sugar, thyme, black pepper, chipotle powder, and garlic.
- Rub all over the chicken and between the breast meat and skin.
- Cover and refrigerate for up to 24 hours, or let sit at room temperature for 30 minutes.
