The marinade used here is also available as a standalone recipe: Honey-Barbequed Fish Marinade (Chinese Style).

Ingredients

  • 1/4 c. (60 ml) honey
  • 1/4 c. (60 ml) thin sliced green onion
  • 2 tbsp. (30 ml) lime juice
  • 2 tbsp. (30 ml) soy sauce
  • 2 tbsp. (30 ml) hoisin sauce
  • 2 cloves garlic, minced
  • 1/2 - 1 teaspoon (2.5-5 ml) chili sauce
  • 1 tsp. (5 ml) minced fresh gingerroot
  • 4 4-oz (115 g) swordfish steaks or other firm white fish ( I used salmon )

Method

  1. Combine all the ingredients except the fish in a small bowl and mix well.
  2. Place the fish in a shallow baking dish and pour the marinade over it. Cover and refrigerate 1 hour.
  3. Remove the fish from the marinade. Grill over medium-hot coals, or broil, about 10 minutes per inch of thickness, until the fish turns opaque and flakes easily when tested with a fork.

fast, easy and very good.
