Soy-Maple Salmon Marinade
A marinade forked into its own recipe per the archive's rule that glazes and marinades are kept as standalone recipes. It also remains inline in salmon with soy-maple and wasabi, where it is originally used.
Ingredients
- 1/2 cup (Japanese sweet rice wine)
- 2 tablespoons (30 ml) soy sauce
- 1/4 cup (60 ml) rice vinegar (not seasoned)
- 1 tablespoon (15 ml) finely grated peeled fresh ginger
Method
- Marinate the salmon: stir together the mirin, soy sauce, vinegar, and ginger in a shallow dish.
- Add the fish, skin sides up, and marinate, covered, at room temperature for 10 minutes.
