Chocolate Ripple Orange Cake

My mom has been making this cake for years.

Ingredients

  • 3 eggs
  • 1 cup (240 ml) sugar
  • 1 cup (240 ml) vegetable oil
  • 1 cup (240 ml) plain yogurt
  • 1 3/4 cup (420 ml) flour
  • 1 teaspoon (5 ml) baking powder
  • 1 teaspoon (5 ml) baking soda
  • 1 tablespoon (15 ml) orange rind finely chopped

make the filling

  • 1/3 cup (80 ml) sugar
  • 2 tablespoons (30 ml) baking cocoa
  • 2-3 teaspoons (10-15 ml) cinnamon

make the glaze

  • 1/3 cup (80 ml) concentrated orange juice
  • 1/3 cup (80 ml) sugar

Method

  1. Beat the eggs in a stand-up mixer for a few minutes. Add the sugar, oil, and plain yogurt and beat well. Add the flour, baking powder, and baking soda, then add the orange rind.
  2. Spoon 1/3 of the batter into a bundt pan that is sprayed with Pam, alternating with the cinnamon mixture, and marble gently with a knife.
  3. Bake at 325 for 50 minutes.
  4. Brush on the glaze while warm.
